Abstract

The impact of the addition of tannic acid (TA) on water vapour barrier properties and oxygen permeability of pea starch (PS):chitosan (CH) films enriched with thyme aqueous extract (TE) was evaluated. The release of TE polyphenols from the films was studied in different food simulants. The addition of TA in PS:CH:TE films reduced the amount of total released polyphenols in all simulants. TA also affected the water vapour and oxigen permeability of PS:CH-based films.
